
Victoria Sandwich Cake Bites Recipe
I used ‘Mary Berry’s easy Victoria sponge recipe’ to create the cake, which I will leave linked here, but I did half the ingredients as I wasn’t going to be making a large cake.
Ingredients:
- Two eggs.
- 112.5g caster sugar.
- 112.5g self-raising flour.
- 1/2 tbsp of baking powder – I didn’t use baking powder but it is optional.
- 112.5g of baking spread – You will need some extra to grease the tin.
- A jam of your choice – I used a jam from a local farm shop near me.
- Buttercream – I bought pre-made buttercream because I was too lazy (making the cake was enough for me). I used Betty Crocker’s vanilla buttercream.

Method:
Preheat your oven to 180C (160C Fan or Gas mark 4). Grease your cake tin with some butter. I had a silicone tray which was the perfect size for the cake bites (I think it was for macarons).

Cream together the butter and sugar into a large mixing bowl. You can use an electric mixer or a good old-fashioned wooden spoon.

Crack the two eggs into a bowl and beat them until combined, then assemble this into the butter and sugar and mix. Then add the flour.

Spoon the mixture into the greased cake tin – I was able to make two batches of these cakes with this amount of mix.

Then pop it in the oven to bake for 25 minutes. I think mine took slightly longer than 25 minutes, so I left them in the oven until they were golden brown and a cake tester came out clean when pressed into the cakes.

Once the cake bites are cooked, leave them to cool in the tin for five minutes and then carefully peel them out of the case and leave them to further cool on a cooling rack to ensure they are cool. Whilst the cakes are cooling, prepare the buttercream (whether you make it yourself or have pre-bought) in a piping bag with a star shaped nozzle.
When you’re ready to construct the cake bites, match the cakes up so that they are of similar size and shape. Using a butter knife, smooth some of the jam of choice across the top of the base cake bite. Then pipe your desired amount of buttercream on top of the layer of jam and place the top cake bite on top of this. Complete this step to all the pairs of Victoria sandwich cake bites. You can then dust the cake bites with a layer of caster sugar as an additional step if you wanted to.
And voila! there you have some Victoria sandwich cake bites to enjoy!
